Amarone is a wine really well known but with a very recent history, it took its origin to a real mistake! Amarone is the brother of sweet Recioto: both are wines made from grapes dried Corvina, Corvinone, Rondinella, and Negrar Oseleta. These are hand picked in September and left to dry naturally in small boxes. Thus the water contained in the berries evaporates and focuses natualmente the must. In January, when pigiamo grapes, sugar concentrations are very high in order to develop relevant and well structured wines. The main difference between Amarone and Recioto lies in fermentation: nell’Amarone all the sugar is converted into the alcohol and get a structured wine, alcohol, and decided. In Recioto the fermentation is stopped in the middle and get a dessert wine with a part sugary important. It is said that 70 years ago now a winemaker has forgotten a barrel recioto: here the natural yeasts present in wine began fermetare and transform all the sugar into alcohol. Eventually, this winemaker, has found that the Recioto was “Scapa” and had become dry. At the time he was a big mistake because historically Recioto was the most prestigious wine. A big mistake because good Amarone in 70 years of life has become really famous!.
